One of the whole 30 recipes we will share today is the roasted cabbage served with herbs and almond sesame sauce. Roasting the cabbage will indulge you with its juicy and sweet taste you might have no idea you could discover from this veggie!
Ingredients:
- Green cabbage, 1 head
- Melted coconut oil, 2 tablespoons
- Granulated garlic, salt, and pepper
- Salted almond butter, 1/4 cup
- Juice of half a lemon
- Coconut aminos, 2 tablespoons
- Chopped fresh cilantro, 1/4 cup
- Chopped fresh basil, 1/4 cup
- Pistachio meats, 1/4 cup
- Chopped mint, 1/4 cup
- For garnish: lime wedges

- Prepare your oven and preheat it to 425 degrees F. Prepare a baking sheet and cover it with parchment paper and aluminum foil, set it aside.
- Chop the cabbage into wedges. Be sure to remove the core as much as you can and place the cabbage wedges onto the baking sheet you have prepared before. Drizzle with coconut oil. Add granulated garlic, salt, and pepper to spice up the taste.
- Roast the cabbage for about 12 minutes and then remove the pan from your oven. Flip every piece of cabbage, then put the pan back in your over to roast for another 8 minutes.
- Make the almond sauce. Add almond butter, lemon juice, water, sesame pol, and coconut aminos. Stir the ingredients constantly while it heats up, and you’ll see how it eventually will become a creamy sauce. If the almond sauce looks too thick, add more water one tablespoon at a time.Take the pan out your oven and remove the finished cabbage. Before serving, drizzle your roasted cabbage with almond sauce. Toss pistachio nut meats and fresh herbs for topping, and add lime wedges for garnish. Enjoy!
