Who love rice pudding? Now, you could enjoy the rice pudding in different way, once it features with amaranth recipes. The sweet tender taste of rice pudding will be tasted yummier with amarant flavour. Moreover, you could enjoy them in Thai way by putting some mango slices. This fresh combination may remind you of Mango sticky rice from Thai’s food streets. Furthermore, this menu will be loved by vegetarians or people who want to reduce their meat consumption.

 

What You Need to Buy:

  • Ginger, 1 piece, peel and slice it thinly
  • Unsweetened coconut milk, 2 cans
  • Milk, 3 cups
  • Arborio rice, 1 cup
  • Sugar, half cup
  • Kosher salt
  • Vanilla beans, 2 pieces, split them

Topping Ingredients

  • Amaranth, 1 tbs
  • Chia seeds, 1 tbs
  • Sesame seeds, 1 tbs
  • Shortbread or butter cookies, 1 ounce, crushed the,
  • Raw sugar, 2 tbs
  • Ground cinnamon, ¼ teaspoon
  • Mango, 1 piece, peel and slice it thinly
  • Mint leaves for serving, choose the fresh one.

How to Cook It:

 

  • Prepare your saucepan; combine the coconut milk, ginger, rice, milk, salt, and sugar into it. Add the vanilla bean pods as well.
  • Boil the mixture while stirring it gently.
  • Reduce the fire heat, cover the saucepan, then simmer the mixture until the rice looks al dente. It may take about 15 to 20 minutes. 
  • After that, uncover the saucepan, cook and stir it.
  • Wait until the rice looks tender, about 5 to 10 minutes longer.
  • After the mixture coats your spoon, replace the rice into large bowl.
  • Cover the large bowl with plastic wrap, let the rice cool.
  • Gently remove the vanilla pods and ginger from the rice. 
  • Cook the topping ingredients, and then serve the rice with its topping.
