The PB2 recipes still allow you to maintain your diet while giving you the delicious taste of everyone’s favorite peanut butter. The PB2 itself is the powdered form of peanut butter which nearly all of its fat already removed. Mixed with water, the PB2 will turn back into a paste similar to the peanut butter, yet with very low calorie contained.

One of the PB2 recipes we will show you here is the skinny peanut butter cups.

Ingredients

For chocolate layer:

  • Unsweetened almond or skim milk, 1/4 cup
  • Unsweetened cocoa powder, 1/4 cup
  • Plain low fat Greek yogurt, 1/4 cup
  • Protein powder or extra cocoa powder, 2 tablespoons
  • Salt
  • Baking stevia, 1 tablespoon, or sweetener, 2 tablespoons

For butter layer:

  • PB2 or peanut flour, 1/4 cup
  • Water, 1/4 cup + 1 tablespoon
  • Salt
  • Baking stevia, 1/2 tablespoon, or sweetener similar to sugar, 1 tablespoon

Instructions

  1. Mix the ingredients for chocolate layers in a small bowl. Stir until well mixed. 
  2. Prepare another small bowl to mix the ingredients for peanut butter layer. Stir until well mixed. Note that both mixtures for chocolate and peanut butter layers have to be creamy and free from clumps. 
  3. With 14 mini muffin liners, line mini muffin tin then spray with cooking spray.
  4. Pour 1 teaspoon of chocolate layer mixture into every liner, followed with 1 teaspoon of peanut butter layer mixture on top of it. Finish off by pouring another 1 teaspoon of chocolate layer mixture atop the peanut butter one.
  5. Move the muffin tin in your freezer and let it frozen for about 1 to 2 hours, or at least until the mixture is firm enough for you to remove it from the liners. These skinny peanut butter cups have to be kept and stored inside the freezer. Pop them out about 10 minutes before you enjoy!
