You can find pav bhaji recipe by reading Ode to Indian Food by Sanjeev Kapoor. But, you can make your own by adapting from that book without spending a lot of time. The recipe below is quite simple. Below are all what you need and how to make it.
All You Need
Prepare first cauliflower (1 cup) and chop it, two potatoes in medium size, capsicum (1/2 cup) and chop it, green peas (1/2 until 3/4 cup depending on your taste), butter (1 tbsp), onions (2 in medium size) and chop them finely, one green chili, red chili poew (1/2 tsp), pav bhaji masala powder (3/4 until 1 tbsp) (you can make it yourself or buy at store), ginger garlic paste (1 tsp), 2 medium tomatoes, kasuri methi leaves (1/4 tsp), butter and 4-6 pav (buns).
If you want to cook this pav bhaji recipe, don’t forget the garnish even though it is optional. You will need lemon wedges, coriander leaves, and chopped onions and butter (1 tbsp).
How to Cook?
The processes are divided into two: preparation and making process.
For the preparation, you will have to boil cauliflower, peas and potatoes. Ensure they are fully cooked. Heat the pan with oil included in it. Get onions and add and fry them so they become translucent. Add the ginger garlic paste. Fry it until you smell it good. Fry the capsicums around 3-4 minutes. The next fry is the tomatoes and keep them until soft and mushy.
Now, you can add masala powder, salt and chili pow. Fry them until mix around 2 minutes. Add the boiled veggies, and mash them well. Last, pour water in sufficient amount to create consistency. Kesuri methi is added, then, and cook it until you get the wanted consistency.
To begin the making process, slit buns are slit horizontally so you just leave the one edge intact. Then, heat the butter on the pan. Take the buns and open them. Toast around one or two minutes. Your bhaji becomes spicier if you sprinkle paav bhaji masala powder inside. That’s if you like it. Last, garnish it with butter and unions. You had better serve your pav bhaji while warm or hot.
